Oh my goodness, this sounds good!

I'm a soup girl, especially soups made with chicken. Made a pot of soup one week with what I had on hand (chicken, quartered zuchinni, fresh corn, diced tomatoes & diced tomatoes w/chiles. Threw in a good handful of brown rice to add a little more substance and it was an instant favorite. Now, to find a great guy to share it with...:D

Hee hee! Ok, my place at 6:00! :smt026

And if you're REALLY romantic, maybe I'll make you some good ol' Pennsylvania Dutch chicken pot pie (it's not a pie - more like big fat noodles) or chicken corn soup. And whoopie pies for dessert! We in PA Make the best ones!

My last bf was from Alabama and loved my cooking although he had to add hot sauce to everything! I learned to eat/make foods like they love in the South and got pretty good at it too! My first try at southern-style potato salad was spectacular (if I may say so myself!)

    For carrot haters!

Here's a recipe for people who hate carrots. Works every time (for me, anyway). They're easy to make, and absolutely delicious! Serves 4-6 (maybe less since they are so good!)

    - 12 med carrots, peeled and cut into coins (frozen is fine, or you can use whole baby carrots, enough to feed 4-6)
    - 3 T butter (not margarine)
    - 2 T tablespoons maple syrup (the real stuff - NOT pancake syrup!)
    - 1-2 T fresh basil, finely chopped (dry is ok too, but the flavor isn't as rich)
    - Pinch sea salt (regular salt will do as well)

Steam carrots until tender but not mushy. In a large frypan, melt butter. Add maple syrup, carrots, basil & sea salt and toss to coat.

(I found this recipe years ago in a book entitled "Fit for Life" by Harvey & Marilyn Diamond.)

Then this recipe is for you. Try it and see if you like them even a tiny bit more. The combo of the butter, basil & maple syrup transforms ick to yum.

I've had it. Just...disgusting. No matter how you disguise it the true evil nature of carrots always comes through.

Other omelet add-ins: Swiss cheese and asparagus tips; fresh spinach & crumbled feta cheese ; diced tomatoes, diced chiles, sprinkled with shredded Mexican cheeses.

Speaking of asparagus, best way to prepare it as a side dish (imo) is lightly coat with olive oil and grill. Season with sea salt.
