Moving the Sabbath from Saturday to Sunday was predominantly done to make Christianity more palatable to the Pagan religions. The Roman Emperor Constantine wanted to institute Christianity, however the Roman Empire was largely Pagan at the time. The Pagan religions worshiped on Sunday, so by moving the Christian Sabbath to Sunday, Constantine made it easier to assimilate the Pagans into Christianity.

This is also the reason we celebrate Christmas in December, as that coincided with the Roman festival to worship the Sun. It's also why we have pagan symbols associated with holidays, like the rabbit and egg for Easter, both Pagan symbols of fertility. It was all an attempt to ease the Pagans into Christianity.
