Most of the cooks at IHOP are black and Latino men and are not that generous with onion rings or fries.
I usually find the portions either consistent or extra-generous if you are on good terms with the server.

I think that helps, too. It ensures that the server will get a good tip. I was at a Golden Corral in Tamarac some time ago and I remembered the server, a cool guy named Ivan would literally do all that he can to serve me. He would guide me to his station and make sure I was taken care of. For his efforts, I gave him a good tip($10.00). I came back a few months later and I didn't see Ivan anymore. I ended up with a waitress who just seemed to be "going through the motions." No personality at all. And worst yet, the quality of the food went downhill. The mashed potatoes were not as good and the steak tasted like a truck tire. I had not been in a Golden Corral since then. It's like the place had lost that loving feeling.
So much about being "black" is negatively defined by others and group identity is so important with an oppressed minority group that I think many black men subconsciously internalize and respond to those stereotypes, b/c the worst thing you can do as a black person is be defined as 'outside' of the circle of 'us'.
