One thing I've always wondered is whether Thanos is a villain or neutral? Seems like he's just...Thanos.

Difference between Galactus and Thanos : Galactus destroys because he is literally a cosmic force of nature and there is no maliciousness in what he does. Thanos destroys with purposeful intent because he his trying to obtain the love and approval of Death or rather the personification of Death, who is shown in the Marvel Universe as being female. Thus why Thanos is classified as a legitimate cosmic villain and Galactus is seen more as a living cosmic disaster ala cosmic ELE hurricane or earthquake.
That's all nice and dandy, but there is one crucial difference: Galactus is fully aware of his intentions. He need to survive through feeding off planets, yes? Well, he's fully aware of that which means he's not just some "cosmic force of nature" since Galactus is aware of his own sapience.
I think Galactus is like a lion on the savanna. He hunts and kills, but he's not malicious, it's just his nature. Thanos on the other hand, takes delight in killing.
But as I said...Galactus possess self-awareness and sapience, so if one is fully capable of realizing it's actions, then surely he too would be of a malicious intent. Unless you're implying that because he's beyond human conditioning, he's simply being granted an excuse.
It's a matter of how you choose to see him. Galactus is not a "person". He's living cosmic energy. The human form he is seen wearing has been explained as what the closest thing human minds interprets him looking like. All intelligent races perceive him as looking as they do. For him feeding off planets is no different than humans choosing to kill livestock for food. But in his case if he does not feed off planets he will die. So is he really "evil" for choosing his own survival over that of what he see as parasites living on/off his primary source of sustenance?
So you're implying this bit of his origin story doesn't count? Wouldn't he be considered a sapient species before his transformation as Galactus? Galactus was originally the explorer Galan from the planet Taa, which existed in the universe before the Big Bang. When an impending cataclysm gradually kills all other life in his universe, he and other survivors leave Taa via a space vessel, eventually becoming engulfed in the Big Crunch. However, Galan does not die, but is transformed through a bonding with the Sentience of the Universe. He gestates for billions of years in the next universe that formed, emerging as Galactus. A Watcher ("Ecce") observes the birth of Galactus, but chooses not to take the opportunity to kill him. Once fully aware, Galactus experiences hunger so strongly that he consumes the nearby planet of Archeopia. The planet ultimately becomes the first of many, as Galactus must consume their life energies for sustenance. In memory of both his dead home-world of Taa and for the first planet to fall prey to his hunger, Galactus constructs his new "home-world", Taa II.
Yes his origin story and history as Galan of Taa prior to becoming Galactus are relevant. But again he has been "transformed through a bonding with the Sentience of the Universe" so he is now beyond his prior existence. He may still have sapient awareness because of his earlier life but he no longer functions on that level. He may act in certain ways because of his sapient awareness, but it is always in a way to insure his continuing existence. It has been speculated that he is a "bridging entity" between universes and his over all purpose in feeding off worlds is when this universe ends he will play a part in ushering in the next universe somehow possibly giving up his life essence for this since he is a survivor from the prior universe.

Were there any instances where he actually demonstrated any shred of his former self in terms of pity or helping out in any case or form?
Fantastic Four #257, Galactus almost starved to death because he was feeling guilty about devouring inhabited planets.
He showed mercy at the end of this story line. In this story his latest herald goes rogue and wishes to no longer be his servant and comes to Earth to force the Fantastic Four to kill Galactus. Galactus of course expends energy in the attempt to recover this herald and eventually strips him of his cosmic power, but his hunger overtakes him leading to the Fantastic Four and Avengers to battle him to stop him from destroying Earth. In his hungry and weakened state they are able to defeat him and contemplate letting him die since he is literally feeding upon himself and shrinking into nothing. Reed Richards takes it upon himself to save Galactus because despite is all consuming cosmic nature he is still a living entity and is only doing what is in his nature. Richards of course succeeds in saving Galactus and even gives him a temporary energy source to fed upon until he can find proper nourishment from a planet. Because a lesser being showed him mercy when it was not in their best interest to do so, he did the same and swore an oath to never come to Earth an attempt to feed upon as he had tried on more than one occasion in the past. This would later come back to bite Reed Richards in the ass with various other races whose worlds Galactus would feed upon and be destroyed after he left Earth.
