This is my friend's soup with kale. These are her words....not mine. She is one who cooks without recipes so I said make it up so I can remake it at home. I just copied and pasted what she had sent me. It's really good. i don't have an exact recipe but this is usually what i do: 3-4 turkey hot italian sausages (or regular if you want), removed from the casing 1-2 zucchinis, thinly sliced 3-4 red potatoes, thinly sliced 1 can beans (kidney or cannellini work best) chopped kale (i don't really measure but it was like 3 handfuls, however much you like!) 1 big can of beef broth (i think 32 oz) 1 large can crushed (or diced if you want pieces of tomato) tomatoes with basil -saute the turkey sausage until brown in a small pan (make sure you take it out of the casing so it's more like ground sausage) -meanwhile, in a big soup pot saute the sliced zucchini and potatoes in some olive oil for 10 minutes or so until they get a little softer -add seasoning to the veggies- i use garlic salt, black pepper, crushed red pepper, and a little cayenne -add the turkey sausage to the big pot and stir with the veggies -add the beef broth and tomatoes. you can adjust this to how you like but this makes it more of a minestrone type broth -rinse the beans and add those -bring to a boil and boil for 5 minutes or so, then put down to a simmer for 25-30 minutes -add the chopped kale and simmer for 10 more minutes -taste to see if you need more seasoning -serve with a little parmesan cheese on top! you can add pasta but it is really hearty even without it, and you can change up the veggies too of course.
Oh, I might just have to try this! I have another bunch of kale & some cannellini beans and zucchini & tomatoes. Just need to get sausage & potatoes. Thanks, JC! (Btw, downloaded that book. Didn't start reading it yet, tho)
they didnt even call me to say my order would be late, or anything like that their customer service is non-existent they lost me indefinitely..at least call your customers to let them know the orders are backed up

Visited my sister and her family today, and was lucky she had made chapati, one of my favorite foods. Dinner was Chapati, Chicken Stew mixed with spinach.
Let's see...for breakfast, I had hashbrowns and toast...and a cup of hot chocolate. For lunch, I had nachos with beef. For supper, I had chicken and mashed-potatoes. but I accidentally burnt the chicken a little, so it didn't taste as good.
Generally most people who visit Kenya get to love chapati. Maybe Sin Mari can give us the "foreigner" view. On a different note, I wouldn't mind guiding and introducing you to the culinary delight that is Chapati.:smt055
